Easy Italian Sausage, Potato, & Kale Soup Recipe
Ingredients:
1 lb Italian sausage (I used Johnsonville Sweet Italian because my kids don't love spicy foods, but if you would like more heat, you can pick one with a bit more kick.)
4 cups Chicken Stock
1 lb Potatoes (diced)
1 medium onion (diced)
2 tsp garlic (minced)
2-3 cups Kale (bite-sized)
1/2 tsp salt (optional)
Pepper to taste
On a stovetop:
Crumble sausage into the pot; cook and stir until browned, about 10 minutes. Drain grease.
Add chicken broth, potatoes, onion, and garlic to the cooked sausage, and bring to a boil. Reduce the heat to low and simmer until potatoes are tender, about 30 minutes.
20-30 minutes before serving, add kale.
In a crockpot:
Crumble sausage into the pan; cook and stir until browned, about 10 minutes. Drain grease.
In a crockpot, add chicken broth, potatoes, onion, garlic, and the cooked sausage, and set on high for 3-4 hours. Check the potatoes; when they are tender, turn the heat down to low.
20-30 minutes before serving, add kale.
Optional: cream, celery, radishes, or other
