Having a summer salad in the middle of winter because Costco finally had candied pecans 🎉 and summer salads are my favorite. 😊
Ingredients:
english cucumber
raspberries and strawberries (or other fresh fruit)
string cheese
praline pecans (mine are from Costco, so tasty)
bacon bits
Raspberry Walnut Vinaigrette (I used Ken's Steakhouse brand)
Instructions:
Cut the english cucumber into bite-size wedges.
Cut the string cheese into discs.
Cut strawberries into quarters.
Sprinkle string cheese, raspberries, and strawberries on top of cucumbers.
Add a sprinkling of bacon bits and a handful of praline pecans. 😊
Add Raspberry Walnut Vinaigrette and enjoy.
Makes a single serving (main dish) or 2-3 servings as a side dish.
